The Parisian has just come out on top in Bombay Sapphire’s World’s Most Imaginative Bartender competition at the final in London.

Remy was up against 14 of the most head-spinningly gifted mixologists from around the world, who themselves had fought off competition from 3,500 competing bartenders, and the brief was to create a cocktail inspired by this year’s host country, England.

Taking on the challenge, Remy called his concoction ‘Paper Anniversary’, and took inspiration from his preview visit to Laverstoke Mill, Bombay Sapphire’s soon-to­-open gin distillery in the beautiful Hampshire countryside.

His recipe features homemade paper syrup, which provides a subtle scent of paper, linking back to the illustrious history of Laverstoke Mill.

As well as a prize fund of the value of £10,000, Remy will also receive a place in the Cocktail Hall of Fame in the Bombay Sapphire Distillery at Laverstoke Mill. He also gets to travel to any one of the world’s leading trade shows alongside Bombay Sapphire’s Raj Nagra, and will work with Virgin Atlantic to create a new signature cocktail that will be served as part of the airline’s menus globally from Heathrow to JFK.
